  • Salt to taste

  • 2 cups yogurt
  • 3 tablespoons gram flour (besan)

  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon fenugreek seeds
  • 2 dry red chilies
  • 10 curry 10-12 leaves
  • 1 tablespoon oil or ghee
  • Salt to taste
  • 4 cups water
  • Fresh coriander leaves for garnishing
  • Optional Ingredients:
  • A pinch of asafoetida (hing)

Instructions
  1. Preparing the Pakoras:
    • In a mixing bowl, combine 1 cup gram flour, finely chopped onion, green chili, turmeric powder, red chili powder, cumin seeds, and salt.
    • Gradually add water to form a thick batter. Mix well to avoid lumps.
    • Heat oil in a deep frying pan over medium heat.
    • Drop small portions of the batter into the hot oil and fry until golden brown and crisp.
    • Remove the pakoras with a slotted spoon and drain on paper towels. Set aside.
  2. Preparing the Kadhi:
    • In a large mixing bowl, whisk together yogurt and 3 tablespoons of gram flour until smooth and lump-free.
    • Add turmeric powder, red chili powder, and salt to the yogurt mixture. Mix well.
    • Gradually add 4 cups of water to the yogurt mixture, stirring continuously to ensure a smooth consistency.
  3. Cooking the Kadhi:
    • Heat 1 tablespoon of oil or ghee in a large pan over medium heat.
    • Add cumin seeds, mustard seeds, and fenugreek seeds. Let them splutter.
