Torta Caprese, is a traditional Italian recipe for a true chocolate cake, or ‘chocolate oblivion’, as it is called, derived from the Capri island.  This cake is a very sweet and moist one that incorporates ground almonds as well as loads of chocolate; the totally bossed texture and the flavors could not have been better.  If you are among those people who usually have a sensitive stomach, and can only consume foods that have been prepared in a special JE bake without any form of gluten, then this cake is for you, because anytime you are in a celebration, this cake is among the most preferred by many.

Ingredients
  • 200 dark g chocolate (at least 70% cocoa)
  • 200 unsalted g butter
  • 200 granulated g sugar
  • 200 ground g almonds (almond flour)
  • 5 large eggs
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Powdered sugar (for dusting, optional)
  • Optional Ingredients:
  • 1 tablespoon cocoa powder (for a richer chocolate flavor)
  • 1 of Zest orange (for a citrus hint)
  • 1 tablespoon liqueur (such as Amaretto or Frangelico)
  • Serve with a dollop of whipped cream or a scoop of vanilla ice cream.
Instructions
  1. Preheat and Prepare:
    • Preheat your oven to 170°C (340°F).
    • Grease a 9-inch (23 cm) round cake pan and line the bottom with parchment paper.
  2. Melt Chocolate and Butter:
    • Break the dark chocolate into pieces and place it in a heatproof bowl.
    • Add the unsalted butter to the bowl.
    • Melt the chocolate and butter together over a double boiler or in the microwave, stirring occasionally until smooth.
    • Set aside to cool slightly.
  3. Prepare the Egg Mixture:
    • Separate the eggs into yolks and whites.
    • In a large mixing bowl, beat the egg yolks with granulated sugar until the mixture becomes pale and creamy.
    • Add the vanilla extract and a pinch of salt to the yolk mixture, and mix well.
  4. Combine Ingredients:
    • Stir the melted chocolate and butter mixture into the egg yolk mixture.
    • Fold in the ground almonds (almond flour) gently until well combined.
    • If using, add the cocoa powder, orange zest, or liqueur at this stage and mix thoroughly.
  5. Beat Egg Whites:
    • In a separate clean bowl, beat the egg whites until stiff peaks form.
    • Gently fold the beaten egg whites into the chocolate and almond mixture, a third at a time, being careful not to deflate the batter.
  6. Bake the Cake:
    • Pour the batter into the prepared cake pan, smoothing the top with a spatula.
    • Bake in the preheated oven for 35-40 minutes, or until the cake has set and a skewer inserted into the center comes out with moist crumbs.
    • Allow the Torta Caprese to cool in the pan on a wire rack.
  7. Serve:
    • Once the cake has cooled completely, remove it from the pan and transfer it to a serving plate.
    • Dust the top with powdered sugar, if desired.
