Description

Carrot Halwa or Gajar ka Halwa is a famous dessert of India that is made from grated carrots, milk, sugar, and ghee. This is so delicious that is tinged with cardamom and sprinkled with nuts and it would be perfect for a festive table.

Ingredients
  • 1 kg carrots , grated (Gajar)
  • 1 liter full-fat milk
  • 200 g sugar
  • 100 g ghee (clarified butter)
  • 1 teaspoon cardamom powder
  • 50 g cashew nuts, chopped
  • 50 g almonds, sliced
  • 50 g raisins
  • Optional Ingredients:
  • 2 tablespoons khoya for extra richness (mawa)
Instructions
  1. Prepare the Carrots:
    • Wash and peel the carrots. Grate them using a grater or food processor.
  2. Cook the Carrots:
    • In a heavy-bottomed pan or kadhai, heat the ghee on medium flame.
    • Add the grated carrots and sauté them for 8-10 minutes until they are slightly tender and have released their aroma.
  3. Add Milk:
    • Pour in the milk and mix well. Let the mixture come to a boil.
    • Reduce the flame to low and let it simmer. Keep stirring occasionally to prevent it from sticking to the bottom of the pan.
  4. Simmer Until Thickened:
    • Cook the mixture until the milk is completely absorbed and the carrots are soft and cooked.
    • This will take about 45 minutes to 1 hour.
  5. Add Sugar and Cardamom:
    • Add the sugar and mix well. Continue to cook on low flame, stirring frequently.
    • Add the cardamom powder and mix.
  6. Cook Until Dry:
    • Cook until the halwa thickens and the ghee starts to separate from the sides of the pan.
    • Add khoya and saffron milk if using, and mix well. Cook for another 5 minutes.
  7. Garnish and Serve:
    • In a small pan, heat a teaspoon of ghee and fry the cashew nuts, almonds, and raisins until golden brown. Add them to the halwa and mix well.
    • Serve the Gajar Halwa warm or at room temperature, garnished with extra nuts if desired.
