The original Molletes recipe starts with bolillo rolls – what can be described as Mexican bread similar to the French baguette but less slender and not as crusty. If you can’t find bolillo rolls you can use French bread or cut the baguette in half horizontally. The bread is cut lengthwise, and toasted until golden brown and crunchy then spread hot refried beans over it. Any traditional Mexican would tell you that refried black beans and refried pinto beans are both great for Mollettes, with regards to the preference of the person.

Onion and garlic are added next to the beans and a plentiful layer of cheese is spread over it typically Monterey Jack or cheddar is used as they are creamy and mild flavored. Cheese is put to bake in the oven to soften it to a pool of creamy magma-like mass which is accompanied by the beans and bread. After melting the cheese fresh ingredients like pico de gallo, avocado and jalapeño can be placed on top of the Molletes to give it that extra taste and color. Guacamole, sour cream, or salsa, among others, complete the dish by providing a sour or spicy addition.
