Ingredients
  • 1 large eggplant (about 500g)
  • 2 tablespoons oil (vegetable or mustard oil)
  • 1 large onion, finely chopped
  • 2 tomatoes, finely chopped
  • 2 green chilies, chopped (optional)
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Fresh coriander leaves, chopped (for garnish)

  • 1/2 teaspoon smoked paprika for extra smokiness

    • Remove the eggplant from the oven or stovetop and let it cool. Once cool, peel off the charred skin and mash the flesh. Set aside.
  2. Preparing the Masala:
    • Heat oil in a large pan over medium heat.
    • Add cumin seeds and let them splutter.
    • Add finely chopped onions and sauté until golden brown.
    • Add the ginger-garlic paste and green chilies (if using), and sauté for another 2-3 minutes.
    • Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes are soft and the oil begins to separate from the masala.
  3. Mixing and Cooking the Bharta:
    • Add the mashed eggplant to the pan and mix well with the masala.
    • Cook the mixture on medium heat for about 10 minutes, stirring occasionally to prevent sticking.
    • Add garam masala and cook for another 2 minutes
  4. Garnishing and Serving:
    • Turn off the heat and garnish with freshly chopped coriander leaves.
    • Optionally, add lemon juice for an extra zing.
    • Serve hot with naan, roti, or rice.
