Instructions
Rinse and Soak:
Rinse 1/2 cup of yellow moong dal and 1/2 cup of rice under running water until the water runs clear.
Soak them together in water for about 15-20 minutes. Drain and set aside.
Prepare the Tempering:
Heat 1 tablespoon of ghee or oil in a pressure cooker or large pot over medium heat.
Add 1 teaspoon of cumin seeds and 1/2 teaspoon of mustard seeds. Let them splutter.
Add 1/2 teaspoon of turmeric powder and 1/4 teaspoon of asafoetida (hing).
Add the chopped green chili (if using), grated ginger, and curry leaves. Sauté for a minute until fragrant.

If using mixed vegetables and tomato, add them now and sauté for 2-3 minutes.
Cook the Dal and Rice:
Add the soaked and drained moong dal and rice to the pot. Mix well with the tempering and vegetables.
Pour in 4 cups of water and add salt to taste.
Stir everything together and bring to a boil.
Pressure Cook:
If using a pressure cooker, cover and cook for 3-4 whistles on medium heat.
If using a pot, cover and simmer on low heat for about 25-30 minutes or until the rice and dal are soft and mushy. Stir occasionally to prevent sticking.
Final Touch:
Once cooked, let the pressure release naturally if using a pressure cooker.
Open the lid and give the Moong Dal Khichdi a good stir. Adjust the consistency by adding more water if needed.
