Ingredients
    For the Salad:
  • 8 oz rice noodles or soba noodles
  • 1 cup shredded cabbage
  • 1 cup julienned carrots
  • 1/2 cup sliced bell peppers (any color)
  • 1/2 cup thinly sliced cucumber
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts or cashews (optional)
  • For the Dressing:
  • 1/4 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tbsp hoisin sauce
  • 1 clove garlic, minced
  • 1 tsp grated ginger
  • Optional Ingredients:
  • Sliced grilled chicken or tofu for extra protein

Instructions
  1. Cook the Noodles:
