Mole chicken is a Mexican dish in which chicken thighs have been carefully cooked in a sauce that has a multi-layered taste and is made with culinary skills. This traditional dish harmonizes the earthy flavor of the dried chilies and the sweetness of the chocolate with the nuttiness of the kernels to form a meal that curbs hunger leaving you happy.

Ingredients
  • 4 chicken breasts, boneless and skinless
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 2 dried ancho chilies
  • 2 dried pasilla chilies
  • 2 dried guajillo chilies
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup almonds
  • 1/4 cup peanuts
  • 1/4 cup raisins
  • 1/4 cup sesame seeds
  • 2 tomatoes, chopped
  • 2 tablespoons vegetable oil
  • 2 cups chicken broth
  • 2 ounces dark chocolate, chopped
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground coriander
  • Optional Ingredients:
  • Fresh cilantro, chopped, for garnish
  • Sesame seeds, for garnish
  • Sliced avocado, for serving

Instructions
  1. Preheat the oven:
    • Preheat your oven to 350°F (175°C).
  2. Season the chicken:
    • Season the chicken breasts with salt and pepper on both sides.
  3. Toast the chilies:
    • In a dry skillet over medium heat, toast the dried ancho, pasilla, and guajillo chilies for about 1-2 minutes per side until fragrant.
    • Remove the stems and seeds from the chilies.
  4. Prepare the sauce:
    • In the same skillet, heat 2 tablespoons of vegetable oil over medium heat.
    • Add the chopped onion and garlic, and cook until softened about 5 minutes.
    • Add the almonds, peanuts, raisins, and sesame seeds, and cook for another 3-4 minutes until lightly toasted.
    • Add the chopped tomatoes and toasted chilies, and cook for another 2 minutes.
  5. Blend the sauce:
    • Transfer the mixture to a blender or food processor.
    • Add the chicken broth, chopped chocolate, cinnamon, cumin, oregano, cloves, nutmeg, and coriander. Blend until smooth.
  6. Cook the chicken:
    • In a large oven-safe skillet, heat 2 tablespoons of vegetable oil over medium-high heat.
    • Add the seasoned chicken breasts and cook for 3-4 minutes per side until browned.
  7. Add the sauce:
    • Pour the mole sauce over the chicken breasts, making sure they are fully covered.
  8. Bake:
    • Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and the sauce is thickened.
  9. Serve:
    • Garnish the Mole Chicken with chopped cilantro and sesame seeds if desired.
